I’m hearing a lot about drop sets lately.

Probably because a new study found it “resulted in greater gains in localized muscular endurance and hypertrophy for the thigh musculature” (Prestes et al. 2017; first link below). That study was on experienced trainees aged ~30 years on average, which is a plus.
